VEGETABLE SPRING ROLLS
INGREDIENTS
150g - Cabbage, finely sliced
1 - Medium sized carrot, finely sliced
3 - Shitake mushrooms Sliced
1 - Medium red onion
50g - Rice noodles (dry weight)
1 tbs - Cooking oil
.5 tsp - Salt
1 tsp - Sugar
1 tbs - Light Soy Sauce
1 - White Pepper (to taste)
6 - Spring Roll pastry sheets (egg)
1 tsp - Plain flour
3 tsp - water

TERIYAKI CHICKEN
INGREDIENTS
350g - skin-on chicken thigh deboned
1 - medium red onion sliced
1 - thumb of ginger sliced
3 Tbs - teriyaki sauce

TERIYAKI SAUCE
INGREDIENTS
300 ml - light soy sauce
30 ml - mirin
30 ml - honey
110 g -sugar
4 - cloves of garlic - chopped
1 - thumb of ginger - chopped
1 - Tbs of corn starch
3 - Tbs of water

ORANGE CHICKEN
INGREDIENTS
350 g - skin on deboned chicken thigh
1 - juice of one orange
1 - juice of half lemon
1 - Tbs light soy sauce
1 - Tbs sugar
4 - Tbs of corn starch
1 - egg
1 - garlic clove chopped
1 - medium red pepper (optional)
2/3 - Tsp salt
2 L - cooking oil
SWEET AND SOUR PORK
INGREDIENTS
500g - pork shoulder (cubed)
1 Tbs - light soy sauce
1 Tsp - sugar
1 - medium egg
3 - Tbs - corn starch
.5 - white onion
1 - redpepper
1 - green pepper
1 - clove of garlic (chopped)
1 Tsp - ginger (chopped)

SWEET & SOUR SAUCE
3 Tbs - tomato sauce/ketchup
3 Tbs - light soy sauce
3 Tbs - white vinegar
2 Tbs - sugar
2 Tbs - pineapple juice or water

TEMPURA BATTER
INGREDIENTS - tempura batter
500 ml - water (chilled for best results)
250 g - cake flour
1 medium - egg
1 - pinch of salt
Flour for coating items before dipping in batter.
